Shiitake and Chanterelle Pizza with Goat Cheese – Serve with Brut

2 1/2 cups unbleached all-purpose flour or bread flour
1/2 cup white whole wheat flour or bread flour
3 tablespoons vital wheat gluten flour or bread flour
1/2 teaspoons coarse kosher salt
1 teaspoon sugar
1 cup plus 2 tablespoons warm water (105*F to 115*F)
1 1/2 teaspoons active dry yeast
3 1/2 tablespoons extra-virgin olive oil, divided
Additional unbleached all-purpose flour (for kneading and shaping)

3 tablespoons extra-virgin olive oil plus additional for brushing
6 ozs fresh Shiitake mushrooms, stemmed, thinly sliced
6 ozs fresh chanterelle mushrooms, thinly sliced
1 cup (packed) coarsely grated whole-milk mozzarella cheese
2/3 cup freshly grated Parmesan cheese
6 ozs chilled soft fresh goat cheese, coarsely crumbled
2 tablespoons sliced fresh chives

For the dough: Combine all flours, coarse salt, and sugar in processor. Stir 1 cup plus 2 tablespoons warm water and yeast in 2-cup measuring cup. Let stand until yeast dissolves, about 5 minutes. Stir in 3 tablespoons oil. With machine running, pour the yeast-oil mixture through the feed tube. Blend until a ball of slightly sticky dough forms, about 1 minute. transfer the dough to lightly floured surface; knead until smooth and elastic, adding more flour if very sticky, about 5 minutes. Rub with 1/2 tablespoon oil; place in a resealable 1-gallon plastic bag. Seal bag. Let dough rise at room temperature until doubled, about 2 hours. Open bag; punch down dough in the bag. Reseal. Chill overnight, punching down occasionally. divide into thirds. DO AHEAD Wrap pieces separately; freeze up to 1 week. Thaw 2 pieces in the refrigerator before continuing. Let 2 wrapped pieces stand at room temperature 1 hour before shaping. For the topping: Heat 3 tablespoons oil in a large skillet over medium-high heat. Add mushrooms; sprinkle with salt. Sauté until tender, about 5 minutes. do ahead be made 1 day ahead. Cool, cover, and chill. Sprinkle 2 large sheets of parchment with flour. Roll out 2 dough pieces, each on separate parchment sheet, to 10-inch rounds, letting the dough rest a few minutes if springing back. Brush with oil; sprinkle each with 1/2 cup mozzarella and 1/3 cup Parmesan. Top with mushrooms, then dot with goat cheese. DO AHEAD Side pizzas on parchment onto baking sheets; cover with plastic. Chill up to 4 hours. Let stand at room temperature 30 minutes. Position 1 rack in bottom third and1 rack in the top third of oven; place heavy baking sheet on each and preheat oven to 450*F for at least 30 minutes. Side 1 pizza on parchment onto each hot baking sheet. Bake 8 minutes; reverse sheets. Bake pizzas until crusts are brown at edges and on the bottom, about 10 minutes. Sprinkle with chives.

1 jar (26 oz) spaghetti sauce
1/2 cup water
2 eggs, beaten
1 carton (24 oz) cottage cheese
1/3 cup grated Parmesan cheese
1 to 2 tablespoons dried parsley flakes
1/2 teaspoon each garlic powder, pepper, dried basil and oregano
9 uncooked lasagna noodles
3 cups (12 oz) shredded part-skim mozzarella cheese

In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the spaghetti sauce and water. Simmer, uncovered for 10 minutes. Meanwhile, in a large bowl, combine the eggs, cottage cheese, Parmesan cheese, parsley and seasonings. Spread 1/2 cup meat sauce into a greased 13 in x 9 in x 2 in baking dish. Layer with three noodles and a third of the cheese mixture, meat sauce and mozzarella cheese. Repeat layers twice. Cover and Bake at 375 degrees for 45 minutes. Uncover; Bake 10 minutes longer or until noodles are tender. Let stand for 15 minutes before serving. Yield: 12 servings

36 uncooked large shrimp, peeled, deveined (about 2 pounds)

Whisk first 8 ingredients in a small bowl. Thread 6 shrimp onto each of six 10- to 12-inch-long metal skewers. Place skewers in 15x10x2-inch glass baking dish. Spoon all but 1/4 cup marinade over shrimp; turn to coat. Cover and chill shrimp and reserved 1/4 cup marinade at least 30 minutes and up to 2 hours. Prepare barbecue (medium-high heat). Grill shrimp with some marinade still clinging until just opaque in center, about 2 1/2 minutes per side. Arrange skewers on platter. Spoon reserved 1/4 cup marinade over and serve.

1 ½ oz Guava nectar
½ oz fresh lime juice
½ oz jalapeno syrup (see recipe below)
3 thinly sliced jalapeno wheels

Fill shaker with ice, add tequila, guava nectar, fresh lime juice, and the jalapeno syrup. shake well and drain into a chilled Martini glass. Garnish with three thinly sliced jalapenos and a small pink rose, if available. For the jalapeno syrup: Mix two parts sugar to one part water in a small pot. slice whole, fresh jalapenos in half and place in mixture. The number of jalapenos used will vary depending on how spicy you want it and how much syrup you're making, but one pepper to each part of the water is a safe starting point. Bring mixture to boil; simmer for a few minutes, stirring frequently. Let cool.

2 strips thick-cut bacon
½ tsp chili powder
2 tsp brown sugar

1 cup Clamato or tomato juice
1 cup IPA beer
1/2 tsp celery salt (plus additional for glass rims)
1 tsp Sriracha
1/2 tsp Worcestershire sauce
2 tsp brine for a jar of Spanish olive
1/4 tsp cream-style horseradish
1 tbs lime juice (about 1 medium lime)
1 tbs lemon juice (about 1/2 medium lemon)
1/2 tsp black pepper

Preheat oven to 350. Thread the bacon through oven-safe skewers. Sprinkle with brown sugar and chili powder. Place on a wire rack over a baking sheet. Bake until bacon is crispy, about 15 minutes. Rim glasses with celery salt. Add all cocktail ingredients to a shaker half full of ice, swirl to combine. Strain into prepared glasses, garnish with celery and bacon skewer.

3-5 fresh basil leaves
2 oz. simple syrup
2 oz. white rum
crushed ice
club soda

Slice the strawberries and place them at the bottom of a tall glass along with the basil leaves. Pour in the simple syrup and muddle the mixture. Stir in the rum and top with crushed ice. Top off with club soda and garnish with Strawberry slices.

Strawberry Beer Lemonade

Take some care in selecting a beer for this recipe, looking for a Blonde Ale, or an American Pale Ale with low hops and notes of citrus.

2 cups Strawberries, hulled and chopped
1/2 cup white sugar
1/2 cup fresh squeezed lemon juice
1 large bottle blonde or pale ale (1 pint, 6 oz)

Add the berries, sugar and lemon juice to a pitcher. Allow to stand at room temperature for 10 minutes for the sugar to dissolve and the berries to begin to break down. Add the beer and ice and stir to combine. Adjust the lemon and sugar to your taste. *Tip: If you don t want the punch to become watered down by the ice, freeze either lemon juice or beer in ice cube ays the Night before, using that in place of ice in this recipe, adding a bit more sugar to combat the bitterness/tartness that will increment.
